Усвояване на добри практики в хотелиерството и ресторантьорството чрез мобилност

The project will involve 20 students from grades 11 and 12 of Professional High School of Tourism. They are trained in the sphere of tourism in the subjects of "Hotel Management", "Production and service in the restaurants and entertainment facilities", "Production of culinary products and beverages", "Organization of Tourism and Leisure activities."
The Mobility project will also include two teachers with good language and professional skills.
Main objectives of the project:
- Achieving European standards of welcoming and servicing guests at the bar, restaurant and hotel
- Creating prerequisites for personal and professional development by applying the acquired skills, competencies, best practices and patterns of behavior in the future career
The project envisages three weeks / 28 March - 19 April 2015 / students’ training placement in hotels in Dresden, Germany. The duration of the practice meets the requirements of Bulgarian Ministry of Education. The hotels and working places will be approved after prior consultations between the partners on the basis of the past experience in the already completed projects Mobility.
There will be selected three and four-star hotels for congress tourism with which WBS Training AG has already established contacts and successfully implemented students’ practices. Students will be assigned in the hotel kitchen, reception, bar, restaurant and room service and will work under the guidance of mentors to cover the whole process of service at the hotel and in order to observe, study and analyze the maximum number of good practices.
Supervision will be carried out by experts from the WBS and managers of the hotels, including direct daily contact with the students’ tutors, observation and analysis of professional and linguistic progress of the participants and solving specific problems related to trainees’ daily work.
The implemented supervision will be the basis for determining the final assessment of the beneficiaries and the validation of the practice by Professional High School of Tourism and issuing Europass certificates.
Methods of implementation of project activities include language, cultural and pedagogical training, mentoring, monitoring, supervision, analysis, evaluation and self-assessment questionnaires, discussions, information campaigns for parents and students, a media campaign.
Expected results:
- Achieved European quality standards for working in kitchen and guest servicing in hotels and restaurants;
- Practical experience in specific German technology of products processing and meals preparing;
- Practical experience in the sphere of organization of events for a large number of guests - cocktails, parties, catering services;
- Studying working with modern reservation systems for welcoming guests and guests accommodation;
- Communication in German in a real business environment;
- Ability to work in a multicultural team;
- Adaptation to the labor market;
- Sharing knowledge and skills in order to multiply the project results.
The project will contribute to overcome the lack of correspondence in already acquired skills and competencies of the students, who are going to meet the requirements of the flexible labor market. By achieving the European quality standards for working in the kitchen and guests servicing in hotel and restaurant, the beneficiaries will be competitive after experience in a real business environment and with increased self-confidence about their professional knowledge and language skills.
Especially valuable will be the experience related to the achievement of specific German technology of products processing, meals preparing and organization of events for a large number of guests - cocktails, parties, catering services which will be a prerequisite for students’ confidence to start their own business. The acquired skills for working with modern reservation system for reception and accommodation of guests will create prerequisites for professional development in big hotel chains in famous tourist destinations.
Communication in German in a real environment will provide confidence in communicating with foreign guests. Practice will contribute to developing students’ self-assessment about their own position and commitments at work in a multicultural team.
For Professional High School of Tourism the shared knowledge and experience of the participants and their accompanying teachers, as well as the impressions of the monitoring will be of great importance in relation to improving the quality of teaching and multiplying the effect of the project by including in the compulsory elective subjects specific techniques connected with German cuisine and hotel standards.
Introducing the new practices will contribute to improving the skills and enrich the experience of teachers in vocational training. The Implemented Mobility projects will motivate younger students to became active participants in the learning process.
