Italskou gastronomií za zvýšením praktických dovedností žáků oboru hotelnictví

The project "Italian cuisine as means of increasing the practical skills of the hotel industry students" deepened the existing expertise, knowledge and skills of 26 pupils of the 2nd and 3rd year at the hotel industry school. Mobility was realized in an Italian town called Cesenatico. The Internship took place in the hotel Raffaello and was supplemented by the practical courses in Italian regional school IAL-Apprendimento Lavoro Innovazione Emilia Romagna. The main target of the project was to improve the professional training, knowledge and skills of the pupils and to extend their skills with new findings and methods of work. Further targets of the project were to improve communication in a foreign language, to enrich the professional terminology, to strengthen the self-confidence of pupils, to deepen social and inter-cultural skills, to increase the value of future graduates on the labour market in the Czech Republic and the EU. The students worked in the hotel's operation on the positions of cooks and waiters. They got familiarized themselves with the technological procedures of the preparation of drinks, meals and desserts of Italian cuisine. Produced pasta, pizza, Italian bread, Mediterranean specialties from fish and seafood. The student also prepared and served during the banquets. Practice and training took place in the modern kitchens of professional school IAL under the guidance of the Italian teachers. The training was thematically targeted to the preparation of pasta, pizza, fish, seafood and traditional Italian desserts, and of course the preparation and service of coffee. After returning from Italy the pupils prepared the meeting where they presented the recipes of the Italian cuisine, Italian dictionary, terminology, and photos taken during the internship. Their classmates were informed about the results of internships, with new professional experience from abroad and got detailed answers to the questions. Photo documentation of the project is used in the school promotion. Pupils mastered the expected learning outcomes which were accurately set out with the use of the ECVET tool. Activities in the framework of vocational training were accepted and verified by Europass. The Italian international cooperation with our partners is being developed and deepened.
