The strategy of EU for the development of vocational education and training is aimed at reaching an international dimension in the quality of professional schooling in order to achieve high levels of employment within the Community. In the context of this strategic task is the organization of mobility in Italy for a group of 20 students from Professional High School of Food Technologies “ Sveti Dimitrii Solunski” – Asenovgrad, studying the profession:”Chef”, specialty:” Production of food and beveareges”. The mobility program is orientated towards the realization of practical vocational training for acquiring knowledge and skills about the organization of the production and the technology of traditional Italian foods that have gained a worldwide popularity - pizza and pasta. With the planned training and the project activities is aimed acquiring professional competence in the area of specific structure and the organization of the production of culinary products – “fast food” type that could be useful for students’ realization and their newly gained skills in many establishments offering similar type of food or to motivate them to build their own business in this field. The conducting of the practice in Italy is aimed at increasing the motivation of the profession and at building a self-confidence of the participants that will have the opportunity to experience the traditions of Italy, offering local food and drinks as a part of the cultural heritage. The mobility program includes a variety of activities: Theoretical training about the characteristics of the products; the business environment and the market of the sector producing pizza and pasta; aspects of safety and hygiene, management of material flows; practical training in a real circle for production of pizza and pasta; presenting the skills for preparing the products; visiting cultural and historical sites of the Veneto region. The building the special professional skills of the students will be realized by mentors that will give their knowledge about the peculiarities in preparing the products. The activities of the participants will be supported by tutor- a representative of the host organization and by the accompanying the group leaders. The result of the training will lead to the development of professional skills and competences in the production of Italian specialties – pizza and pasta; improving the key competences and personal development through improving the professional and social communication in a foreign language in terms of residence and studying in a foreign country; improving the teamwork and digital skills in the preparation of reports and work materials. The project will affect the motivation for a career development and continuing the education in their profession acquiring of European consciousness and confidence; understanding the European values; enhancing the suitability of the users to the requirements of the labor market in the country and in Europe. Meeting the culture, traditions and the way of life in a country that is a member of the EU will influence the personal development and social adaptivity of the participants. The project will contribute to the increasing of the transnational capacity of Professional High School of Food Technologies “ Sveti Dimitrii Solunski” – Asenovgrad in constructing international partnerships; raising the prestige of the School by achieving European quality in education; it will affect the formation of solid partnerships with business and social partners. It will make the school a desirable place for acquiring vocational education.
